Salina's Story

It can be overwhelming to feel like you've tried everything and not been able to accomplish your goals. Salina shares how her life was transformed when she found the right path.

"At 230 lbs and 5'4", it was completely depressing. I had to own that I had become obese. OBESE! How did this happen? Where do I even start? I was overwhelmed. I tried everything for several years with minimal results.

A long time friend of mine shared her story with me. How she struggled as I did, then she found a program that worked! I followed her journey with program then coaching for over a year before I finally asked her for more info. I joined and I met my goal of a healthy weight. I finally achieved what I had been trying to accomplish most of my adult life. I wish I had known of it long ago!"

Southwest Chicken Soup Recipe




Ingredients:
* 45 oz Chicken, breast, boneless, skinless (raw)
* 6 cup Cooked Tomatoes, canned, stewed
* 12 oz Shirataki Noodles
* 2 1/2 tsp Oil, olive
* 1 tsp Chili Powder
* 4 tsp Garlic
* 2 tsp Bay Leaf
* 1/2 tsp Cayenne Pepper
* 1 cup Cilantro
* 1 tsp Cumin, ground
* 2 tsp Lemon or Lime Juice
* 4 cup Chicken Broth

Preparation:
1. Cut shirataki noodles into 1 1/2 inch sections.
2. Chop garlic if using cloves (1 clove = 1 tsp) and cilantro separately.
3. Rinse the chicken under cold water and pat dry.
4. Heat oil in a large sauce pan over medium heat. Add garlic and saute for one minute.
5. Add the cilantro, stir, and cook for one minute more.
6. Add canned tomatoes with juice, chicken stock, cumin, chili powder, and bay leaves. Bring to a boil.
7. Reduce heat to a simmer and add the chicken breasts and cayenne pepper.
8. Simmer for 15-20 minutes until cooked throughout. Remove and set aside.
9. When chicken has cooled, shred the chicken breasts.
10. Add lime juice and shirataki noodles to the broth. Bring to a simmer and add the chicken.
11. Once chicken is reheated, serve.

One serving provides 1 Lean, 3 Green, 3 Condiments, and 1/2 Healthy Fat.

A bit of Levity!

This is one of my favorite photos of Greg and I - it reminds me to have fun and encourage others to be playful and audacious!!

This attitude helped us face our weight and health issues with a bit of levity. Send me a favorite "Let's not take ourselves so seriously" photo of you. What are you doing for fun? How can a playful attitude help you towards your goals?

Getting serious for a moment, here's a comment I've heard often, "I've been trying to do it on my own and it's just not working! I lose a couple of pounds and then regain them the next week. It's soooo frustrating!"

I know! Been there, Done that!

For me and many others, the best way to lose the pounds is to Get into "Fat-Burning" as quickly as possible. The pounds melt off as soon as I recommit to following the Program, doing the 5&1 with focus, gratitude, and honesty. Then, I transition by the book and commit to eating "clean" (healthy protein, lots of veggies, fresh fruit, and no junk) for a lifetime! When I slip back into old habits and pack on 5-10 pounds, I do it again! I learn more about myself and what it takes to stay slim and healthy constantly. Thank you for being on this journey with me!

Don't ever give up! No matter how many obstacles you're facing, keep your eye on the prize, make a new plan, connect with others who have been successful and keep going!

Cauliflower Pizza Recipe ... Oh Yummmmm!

This is an all-time favorite!

Let's face it ... Pizza is important ... It's been mentioned in three of our blogs so far but always in a derogatory way ... my apologies!

Recently, I found a recipe for a pizza crust made with cauliflower that is compliant on Program.  In addition, it's gluten free and delicious. (Greg simplified it by using only one kind of cheese and suggests you use 1 cup of cauliflower and 1/2 cup either mozzerella or white soy cheese) This has blown my preconceived notions about pizza out of the ball park.

This is a particularly important "score" because it's generally Greg who comes up with the really yummy treats at our house.

When Greg and I set up household as newlyweds 39+ years ago, we didn't know each other very well.  The courtship had been a long-distance one with lots of letters and phone calls of the mushy variety. So, while moving our meager belongings from distant apartments into our new home, I assumed, because of my gender, that I'd be in charge of the kitchen and began to put things away accordingly.  To my surprise, as I was about to organize the silverware into a particularly convenient drawer, Greg announced, "You can't put those there, I need that drawer for my utensils!"  This was my first clue that I had become, not only a very happy Mrs Malby, but also, an ever willing taster, tester, and thrilled recipient of his culinary experiments!  Thus, to score one of the greatest recipes of all times is really a feat worth noting!!

You can eat the whole pizza yourself or share ... if you do, you'll need to add an additional 1/2 serving of protein and 1 1/2 servings of greens to get the calorie and protein amounts right .. oh darn!  Artichoke hearts and basal are my favorites.

For more wonderful variations and tutorials, google "cauliflower crust pizza" ... Enjoy!  PS, most recipes suggest cooking the cauliflower before making the "dough" but it's not necessary - it bakes up just fine without that extra step.

Healthy Saturday Morning Recipe

Sat Morning
Ingredients:
* 1 cup egg beaters (1/2 lean)
* 1/2 cup low moisture part skim 2 % mozzarella cheese (1/2 lean)
* 1/2 cup tomato, chopped (1 green)
* 1 cup spinach, chopped (1 green)
* 1/2 cup red pepper, chopped (1 green)
* 2 Light Laughing Cow Cheese Wedge (1 healthy fat)

* 1/4 tsp salt (1 condiment)
* 1/4 tsp pepper (1/2 condiment)
* 1/4 tsp onion powder (1/2 condiment)

Directions:
Preheat oven to 375. Spray a baking dish with cooking spray. Mix ingredients all together in a bowl. Pour mixture into prepared pan. Bake 35 minutes.
Servings: 1 complete lean and green meal, 2 condiments and 1 healthy fat.

What's in it for Me???

I love the glimmers of insight that arrive fully formed as I waken each morning ... It's like I'm given a gift when I am most most vulnerable and not yet caught up in the shoulds, tasks, and concerns of day.  This morning, I woke with the realization that it's important to share, "What's in it for Me."

Each of us has the same basic needs, we each want to be Happy, Healthy, and Wealthy in every way ...

Happy:
Being a Health Coach brings me a great deal of happiness - it pulls from every skill, talent and interest within me. Coaching gives me a sense of meaning and purpose as I enjoy relationships and hone skills.  On a daily basis, I get to hear the heart wrenching/warming stories and help people and families use the info and tools I offer.  The transformation of clients and coaches gives me a steady flow of over-the-top joy!!!

Healthy:
By immersing myself in the company of individuals and organizations who are pursuing health so, I'm on a constant learning curve.  By working with clients, I've built a network of support around me.  And, by working with Health Coaches, I am called to be accountable in ways that I couldn't have imagined.

Wealthy:
First, our parent company, Medifast, has a wonderful compensation plan (including access to health benefits) ... they really want clients to be successful so they invest a lot of time and energy in training, supporting, and certifying the Health Coaches. Second, within the Take Shape for Life community, there's a wealth of experience, commitment, and information ... We get to learn from such an awesomely diverse group individuals.  These co-workers come from all walks of life.  Many have successfully burned through 150-200 pounds of life-threatening fat. 25% of the Health Coaches are medical providers including MDs, RNs, Nurse Practitioners, Midwives, Chiropractors, Massage Therapists, Dietitians, Naturopaths , and Cardiologists.  There are many teachers, entrepreneurs, gym owners, retired moms, dads, and professionals.  Plus, there are many young people choosing to help others, be self employed, and build strong businesses ... they are so social media savvy that they rock my socks off!

Finally, the wealth of time freedom is the very best!  At 55, I wasn't ready to be fully retired and go without an income ... I needed to find a way to be part of peoples' lives and make a reasonable living without being up all night!  As most of you know, I retired from a faculty midwifery role at OHSU.  I loved my position and the moms, babies, families and colleagues ... but 28 years of chronic/cumulative sleep deprivation was not bringing out the best in me and I saw the signs and retired early.  So now I have time freedom to work and engage with clients and coaches on my own schedule.  I'm freed up to truly "Be" with my husband, grandkids, and friends frequently.

I am sooo grateful!  And, I offer the benefits of coaching to anyone who wants to investigate being a "coachee" or "coacher".  Just call me ... I'll give you the skinny on what it takes and what rewards you get!!

It's Personal!

Good Morning Fellow Take Shapers!
It's personal ... this struggle to unload excess chub and gain a higher level of health, happiness and fitness ... it's personal and ongoing!
  • Do you remember the day you discovered how easy it was to melt the pounds off with the Medifast foods?
  • Do you remember how easy it was to cheat (just a little!) and stall the whole process?
  • Remember when it dawned on you how easy it would be to gain it back if you weren't watching every bite you took?
  • And, do you recall what a relief it was do get back on program?
Yep, me too!
I'm passionate about staying slim, having only one size of pants in my closet (EVER!!!). 

As I've struggled and stabilized over the past six years, I'm grateful that I've adapted the "Habits of Health" as set out by Dr Andersen.

The cravings are gone and I'm much more aware of how I feel after eating certain foods. A handful of chips, fast food burger, or serving of cake leave me feeling itchy, bloated, and grouchy. My habits have changed. If they hadn't, I'd be much worse off then I was when I started.

Recipe for "Skinny Broccolli Salad"

Finally, a recipe for "Skinny Broccoli Salad"  from Sandy's Kitchen.

I love summer salads! 

Ingredients:
3 cups broccoli florets (6 Greens)

1/4 cup 2% Fage plain Greek yogurt (1/6 Lean)
2 tbsp light mayo (2 Healthy Fats)
2 packets Nu Naturals Stevia or sweetener of choice (2 Condiments)
1 tbsp apple cider vinegar (1/2 Condiment)
1/4 tsp salt, optional (1 Condiment)
2 tbsp low sodium real bacon bits (2 Condiments)
1 oz sliced almonds (2 Snacks)
1/3 cup reduced fat shredded cheddar cheese (1/3 Lean)

Directions:
Place washed broccoli florets in a medium sized bowl, set aside.
In a small bowl, combine yogurt, mayo, sweetener, vinegar and salt. Stir until smooth.
Pour yogurt mixture over broccoli and stir until all combined. Add sliced almonds, bacon and cheese. Toss gently until all pieces are evenly coated.
2 Servings with 1/4 Lean, 3 Greens, 3 Condiments, 1 Healthy Fat and 1 Snack per serving
You still need to add 3/4 Lean to complete your Lean for the day.
Some examples are:
4.5 oz chicken breasts from the Leaner category
5.2 oz of shrimp or tilapia from the Leanest category
1 1/2 cup egg beaters

Ron and Tina's Story!

Check out Ron and Tina! They are embracing their health as a journey and enjoying the victories along the way. Ron shares:
"Possibility exists for anyone. There is no secret formula, program, drops you put on food, counting points, wraps, cheat days, eating like a Neanderthal, living on shakes, or whatever else is out there. It's all about waking everyday and making choices about one's health. Last year we hit rock bottom with our health and excess weight. We were both clinically diagnosed at being obese. It was either change our lifestyle choices (primarily eating) or suffer the consequences. Diabetes runs on both sides of my family. I was on blood pressure meds for three years. Tina has rheumatoid arthritis and excess weight is painful for her hips and joints. Today, at the age of 64, a resting pulse of 38, a blood pressure average of 118/78, and a BMI of 20, I did a 6-mile run in the Arizona desert under a blue sky and 75 degrees at less than 8 minutes per mile. A year ago there is no way I could have done that. The God of the second chance came through for us again. This time it was all about our health and we're not going to blow it. God has a plan for us and it has nothing to do with numbers on a scale and everything to do with honoring Him in what He has planned for us. Our new health status is a means to an end. Our story is not yet finished."

Why am I constantly Battling with the Chub???

"The core of the Habits of Health system is built on the science of multiple fuelings. By breaking your total caloric intake into smaller meals, you can boost your metabolism and balance your glucose and insulin levels. Metabolism is connected to weight loss, and your glucose and insulin levels are connected to inflammation, the reduction of which is critical for preventing disease.
In recent years, a number of new approaches to dieting have advocated fasting or minimalized the value of multiple fuelings. The argument tends to boil down some variation of this: fasting is good for you, and it doesn’t matter how or when you take in your calories, as long as you get them.
The lifestyle that results from this approach is one where meals can come after long periods of intense hunger. In this setting, gorging becomes the norm, and the likelihood of overeating goes up. The risk of consuming unnecessary calories aside, this approach to nutrition could have other consequences as well, like increased belly fat and pre​-​diabetes.
A recent study published in The Journal of Nutritional Biochemistry compared the health of mice that gradually consumed their calories throughout the day against mice that gorged their calories all at once. The gorging group gained belly fat and developed pre-diabetes (the study was not long enough to follow the mice all the way into type 2 diabetes). While this study was small and with mice, the results are consistent with the science of multiple fuelings that we cover in Dr. A’s Habits of Health.
Study author Martha Belury said that “you definitely don’t want to skip meals to save calories because it sets your body up for larger fluctuations in insulin and glucose and could be setting you up for more fat gain instead of fat loss.” She also notes that this research supports the idea of eating small meals through the day to promote weight-loss.

In a typical Western diet of highly processed, high-glycemic foods—soft drinks, candy bars, bagels—blood sugar (or blood glucose) rises dramatically, which in turn makes insulin levels rise. What happens next is interesting. This elevated insulin level actually causes blood sugar to plummet, creating a rapid rise and fall pattern where insulin and glucose spike and then plummet, spike and then plummet, and so on.
As your glucose levels fall below normal, your brain sets off a series of messages that cause cravings, and soon you’re scrambling for something sweet and full of calories, thus continuing the cycle of high and low glucose levels. This pattern reinforces eating patterns that lead to poor health and obesity while also taking you out of an efficient fat-burning state. In short, you become a fat storage machine, which is what the researchers at Ohio University noted in mice in the study cited earlier.
When you eat a series of smaller meals throughout the day, you level-out your glucose and insulin levels, eliminating the dramatic spikes that trigger overeating and a number of other unhealthy consequences while reaping the benefits of putting your body in a naturally fat-burning state.
This has been a core Habit of Health in our program for some time, but in my mind it’s critical to continue returning to the newest science. I’m on the lookout for new developments that could make health more accessible, but I also want to make sure that you have a resource that helps you sift through science and make sense of it all.

There’s no doubt about it, laughing feels good! Laughter has a way of lifting your spirits like nothing else can. It’s such a simple experience and one that your mind and body benefit from. It’s amazing what a big dose of laughter can do to improve your mood and increase your overall happiness. In addition to feeling good, laughter has real health benefits.
Laughter stimulates many organs - Laughter enhances your intake of oxygen-rich air, stimulates your heart, lungs and muscles, and increases the endorphins that are released by your brain.
Laughter activates and relieves your stress response -A lively laugh fires up and then cools down your stress response and increases your heart rate and blood pressure, resulting in a great, relaxed feeling.
Laughter soothes tension - Laughter can stimulate circulation and aid muscle relaxation, both of which help reduce some of the physical symptoms of stress.
Laughter improves your immune system - Negative thoughts manifest into chemical reactions that can affect your body by bringing more stress into your system and decreasing your immunity. In contrast, positive thoughts actually release neuropeptides that help fight stress and potentially more-serious illnesses.
Laughter relieves pain - Laughter may ease pain by causing the body to produce its own natural painkillers. Laughter may also break the pain-spasm cycle common to some muscle disorders.
Laughter increases personal satisfaction - Laughter can make it easier to cope with difficult situations. It also helps you connect with other people.

New online class every Monday night!

Good Morning Fellow Take Shapers!

Greg and I went on program the first time in 2009. The weight loss results were gratifying and pretty astounding! We are now six years into this journey and are fully aware that, in order to stay slim and healthy, we can never go back to the eating habits we had before. Our lives, happiness, and health changed and we embraced it. We go back on program periodically with the seasons when pounds have begun to sneak back on. (I have ONE size of pants in my closet, if they get tight, I go back on program and examine the habits that lead to fat storage vs fat burning so I'm better every time) ) But there's a piece of the transformation that people rarely talk about ... it wasn't just our bodies that were chubby, it was our emotions, habits, and patterns of thought. It was our feelings about ourselves. This story, The Myth of "After", says it beautifully. I'd love to hear your thoughts, fears and realizations too!

The Myth of "After!"

This is one of the most important and difficult concepts to grasp and deal with. Because it's so important, I'm pasting it in full. you can go to this young woman's blog by clicking on The "After Myth." Here's her story:

In my first post, Before, 3 years ago, I said “I’m not to After yet, but I’m closer to After than to Before.”
I now weigh 117 – 120 pounds (depending on the day), and standing at 5-foot 6-inches, that measurement means that After is very, very here. But, before you congratulate me, dear readers…if I have any…and dear friends and family who I know follow this blog… I have to come clean with you: I don’t feel like I’m at After. I’m terrified of being at After. And, I don’t like that After is here.

The tagline of my blog is “uncovering myself one pound at a time.” For most of this blog, I’ve spoken strongly about how my relationship with food and myself was what caused my weight struggles. I stand by that. The thing is, the symptoms have resolved faster than I’ve been able to treat the deeper disease. I’ve lost the weight, but I’ve failed to uncover and learn to truly love myself in the process. Truthfully, I have no idea who I am without “needs to lose weight” being one of the primary parts of my identity.
This is why I have not been posting…because this blog is not about weight loss…it’s about life gain. I could not bear to post here about the beautiful things one can gain in life by learning to love yourself while, in the background, hating myself so hard while the weight melted off. Progressing on the outside while regressing internally. Because, that’s the truth, readers. The last stretch of this weight loss hasn’t been healthy OR happy: it’s been agony. It’s been sad. It’s been an exercise in mourning.

I’ve gotten so good at putting on the happy face. At “smile, nod, yes, thank you, I have lost a lot. No, I’m not trying to lose any more; you don’t need to worry.” I’m very good at this script, but it’s been such a lie, readers. The truth is my body melted away, and I stared at myself in the mirror not understanding why I couldn’t love the skin I’m in. Why? I thought After was the goal!
But I made a mistake.
A crucial mistake.
I forgot that the number on the scale is only a number. Only just a number. It’s not a before. It’s not an after. Getting that number to a certain set of digits is not my After.
I’m not at After. There is no After – happily ever or otherwise. There is only today. Just today – During.

I tell you this now not to discourage you but to hopefully prevent someone from making the mistake that I did and associating After with a number. I weigh 120 pounds and still struggle with my weight. Losing weight does not mean you no longer struggle with your weight; I wish I had truly understood that. I still struggle with food. I still struggle with me.
Looking at the picture I put first in this post, I have to pause. I look at me … past vs. present. That is me. All of those pictures are of me. People say they do not recognize the girl in the other pictures. I’m here to say: that girl is me.
Don’t look at her as an abomination, because enough people, myself included, did that already.
Don’t congratulate me on no longer being her; I still am her. And doesn’t she deserve to be?
After3 2Don’t tell me I look better; I don’t. I look different.
Don’t speak of her as if she is a poor, piteous person. She’s not.
She’s me.
She’s standing right here, and she is fucking strong.
There. Is. No. After.
There’s no pot of gold at the end of the rainbow of weight loss because the rainbow has no end.
There is today. There is now. There is during. There is life.
After6 2I uncovered myself one pound at a time; now, I must REcover myself…I must DIScover myself. And that…that is the new goal. Not numbers. Not sizes. Not inches.
Me. I am the goal. Finding. Loving. Being.
