The Skinny on Tofu


The Skinny on Tofu

Unless you grew up in a family that used tofu in their meals, you might wonder what you are going to do with this block of white bean curd on the cutting board in front of you.  Tofu comes in different textures from soft to firm.  We use the "Silken Firm" to blend into creamy dips and the "Extra Firm" for cubing into stir fries  Tofu has a remarkable ability to take on just about any flavor you add.  It also comes in a variety of noodle shapes.  Tofu is low in cards, high in protein and a great food if you are on a weight loss program.

For lunch today, Polly and I had the Tofu Shirataki macaroni style noodles with a marinara sauce.  We added a little extra protein and vegetables to the sauce and had a great lunch.  You can get these noodles other types of tofu at many retailers, usually in the specialty food section.  If you have a Japanese or oriental store nearby they should have a good selection of tofu products. 

A great source of information about tofu products can be found at House Foods.  Their website features everything from the making of tofu to a great recipe catalog.  Their products are made with non GMO soy.  They also offer a line of organic products.  Eating plant based foods is good for your health and the health of the planet.

Don't Fall Off The Wagon!

So, we know what it is to be on the wagon ... and it feels wonderful!!!  Wonderful because I know where I'm going, the pounds are steadily coming off, new habits are becoming established, and the path ahead, leading to weight loss and optimal health, is becoming clear.  If you've been struggling with your weight and your health, you are in good company!  Our clients and coaches come from all walks of life - they hold teaching and nursing positions, one calls himself a a "high tech computer geek," another is a bicycle mechanic. They are in sales, the arts, event planning, banking, and recruiting.

Here is one of my favorite quotes for the week:
I had become a professional dieter! I'd tried everything including HCG shots, pills and hypnosis for weight loss.  Before I read Dr A's book, I didn't realize that my cravings and persistent hunger was physiologic!  I just thought I didn't have will power and was bound to fail! With each dieting attempt, I'd be successful for a little while, then I'd fall off the wagon only to regain what I lost and more.  I needed an alternative!  I needed a doable lifestyle change - Thank you so much for showing what to do, how to do it and helping me!!

Healthier School Lunch Programs Now Take Shape


While improving the quality of school lunches is not the total answer for solving the obesity epidemic in this country, It is certainly a great leap forward.  Our community (you and I) can be successful in driving government policy. This article is an example of how policies are changing to provide more nutritious meals for our children.  We can also become better role models, promote educational opportunities thus shaping lifelong eating habits and creating a healthier society.
This article below is from USA Today and outlines new legislation that has been enacted to promote a healthier lunch program for our schools.

Government requires more fruits, veggies for school lunches


"Today the government is releasing new nutrition standards for school meals that spell out dramatic changes, including slashing sodium, limiting calories and offering students a wider variety and larger portions of fruits and vegetables. These changes will raise the nutrition standards for meals for the first time in more than 15 years.
"When we send our kids to school, we expect that they won't be eating the kind of fatty, salty, sugary foods that we try to keep them from eating at home," first ladyMichelle Obama said in a statement. She is announcing the new standards today along with Agriculture Secretary Tom Vilsack.."

The Food and Drug Administration (FDA) is calling for public comments to help determine if it will take the necessary steps to reduce sodium levels in our food supply.  Please send a message today to tell the FDA to make sodium reduction a top national public health priority!  The deadline to submit your comments to the FDA is this Friday, January 27, 2012.
Today’s average daily sodium consumption for all adults is an astounding 4,000 milligrams (mg).  According to the 2010 Dietary Guidelines, almost half of all Americans should consume no more than 1,500 mg per day.  It is not hard to see why health experts agree that Americans are consuming far too much sodium.  High levels of sodium consumption contribute to hypertension and an increased risk of stroke and cardiovascular disease.  Reducing per capita intake of sodium in half would save 150,000 lives per year and billions in health care costs.

Why I took the Challenge!

I asked our Challengers to share what it feels like to be in "Fat-Burning," what their vision is for their health this year, and why they've chosen to take the "Challenge" ... here's the first response: 
1.  I know I'm in fat burning when I feel satisfied, energetic and alert!  its a GREAT feeling!!
2.  My vision for my health this year is to attain my most healthy weight/bmi, and to be physically fit (heart health/endurance).  The steps I'm taking to achieve my goals are doing TSFL, and doing strength, cardio, and core training  3-4 times a week.
3.  I committed to the challenge of slimmest winner because I was already on the program, and I love fun, healthy competition!!  The only thing I have to lose is unwanted fat weight!! YEAHHH!!!
We are all winners when we set a goal, commit, connect, and keep our eye on the prize!

"There's always a fine line between loving food and being addicted to it. "Fat Chef," a new Food Network six-episode show that premieres Thursday, January 26 at 10pm, explores chefs that have gone over that line. Each episode features two chefs working with a health consultant to attempt to defeat their abusive relationship with food. It sounds like heavy stuff -- it's not easy being unhealthily addicted to the one thing that also happens to be the central focus of your career.
In the preview clip from the first episode below, pastry chef Michael Mignano is a 36-year-old, morbidly obese (around 500 pounds) pastry chef from Long Island who knows that he needs to change his life. His father died at age 15, which Mignano admitted really "sucked." Mignano, who has two young sons, doesn't want the same thing to happen to him and his family."

Because we do not have cable we would like to hear from readers that are able to preview this show.  
This is interesting because here is a guy who cooks for a living realizing that he needs to change the way he eats.  He wants to live long enough to see his kids grow and has the ability to explore the issue on national television.

Health Coach Positions open


Evolution of the professional "Health Coach" is relatively new to the scene even though many of us have been coaching family, clients, students, and patients to better health and well-being for years.  Development of the professional health coach has been complicated due to lack of standardization, access to credible programs and experienced mentors.  Furthermore, there is confusion between "health coaching" and the role a sales consultant plays when educating, marketing, and selling health and wellness products - some beneficial, some not-so-beneficial.

Consumers are in desperate need of accurate information, quality programs, and committed, affordable coaching.  We are all bombarded with media hype, check-out line periodicals promising miracle weight loss tricks, super charged power drinks in our gyms, and fast food vendors every where. There is more interest in getting at what's in our wallets than promoting a healthy community.  We deserve better!

Day 4 of the "Slimmest Winner" Challenge!


This is day 4 of our first Biggest Loser "Slimmest Winner" Challenge!

About day 3 -  Whether you're new to making a meaningful dietary change or just getting back into the swing of one, I'm sure you know what I mean -  Day 3 can be uncomfortable as we complete the process of burning through the glycogen stores in our liver and "go looking" for other sources of fuel.  On day 3 we frequently feel edgy and grumpy.  Our antennae are up for potential munchables.  The best source energy is the wonderful, pre-digested, golden fuel we've been packing around our middle, our hips and thighs!!!  Here's what one of the Challengers had to say:

I'm so glad day 3 is over!  I know I'm in fat-burning when I'm not hungry, have energy, and can think clearly ...  I was certainly not there yesterday ... but today is a much better day! When I restarted for the Challenge, I didn't allow myself extra snacks because I knew that would just prolong the process and discomfort.  I just kept reminding myself that the purpose of the effort was to burn through my own stored fat.  It's ok to be a little hungry on day 3.  I was glad it was Sunday and I could just chill out. I also took several walks because, like you told me Polly, it's easier to change my environment than it is to change my mind!"

The link below is an article from Grist on line reporting that the average American throws away $135-$175 in food every month.  Taking a look at my own buying habits I see changes I can make that will reduce the amount of food I waste and save me money.  Take a minute to read the attached article and give it a little thought.  It could save you some $.

One of the ways that we reduce waste in our household is to make soup.  Soup is a great way to use leftovers as well as any food that has not been eaten and is in danger of going bad.  Soup can also be frozen in smaller portions and used at a later date.  This is a great time of year for soup.  Click on "Post a Comment" and share with readers your favorite soup or recipe for using leftovers.

Foods that feed the body and the brain take a little thought and some extra effort for the parents.  Offering your child a plate of only vegetables may result in some "hesitation."  We must find ways to involve kids in creating healthy food.  Encouraging creativity is a good all around activity with many mental, spiritual and health benefits. For those of us that are gluten intolerant, remember there are several good gluten free pizza crusts on the market these days.  In many cases gluten has been associated with ADHD in children. 
  • Bottom line is to take the time to read the labels and learn which foods lead to health.  
  • Participate with your family in eating well and creating a lifestyle of health.

Our "Biggest Loser" Challenge is now our "Slimmest Winner" Challenge! Let's alleviate what British researchers have identified as the most depressing day of the year - the 3rd Monday in January .Their study showed that  76% of the women in the UK hit an all time body image low point on the 3rd Monday of January each year ... It's the day they realize that their New Year's resolutions aren't going to work - again! Rules for the Biggest Loser Challenge

Making the Hard Choices just got a little more fun!
Rules for the Biggest Loser Challenge 
January 13th - February 24th, 2012

1.      Fill out the Client Profile - Current clients may have one on file.
2.      Youngsters age 15-18 may join the Challenge as long as a parent signs a health and liability waiver and participates in the Challenge with them.
3.      Send in a full length "Before Photo" in form fitting T-shirt and work-out pants taken within 48 hours of starting the Challenge.
4.      Send in a full length "After Photo" in same clothing, same background within 48 hours of ending the Challenge.
5.      Weigh in on Friday, Jan 13th and report weekly results each Friday thereafter until Challenge ends on Friday, Feb 24th.
6.      We're on the honor system - you know what we mean!
7.      No illegal substance use please - including current use of HCG in any form.
8.      Clients of Health Coach Resource receive free coaching and discounts on Medifast foods. 
9.      Winners will be announced on Sunday, February 26th.
10.  Participation is voluntary and contestants acertain that they are healthy enough to participate.  Individuals with significant health issues and/or under medical supervision, should consult with their provider before signing up.

Lost and Found 2011

It's astounding to us - Together, our clients have burned through more than 2,500 pounds of excess fat this year!  We are doing something that few people have been able to do - we have each tapped into our reservoir of stored fuel, used it effectively, established new healthy habits and re-set our body size.  Congratulations, Well Done!!

Even more important than the actual number of pounds lost, take a look at the percentage of body weight affected.  Several clients have shed more than 33% of their weight ... Here's what one said:

"It's taken me quite a while to adjust to my new body size. In addition to not recognizing myself in a reflection, I became uncomfortable with all the complements ... I just didn't know what to say!  This kept me on a plateau for a while ... but then I discovered shopping and the abundance of inexpensive consignment shops in my town.  I'm having a blast now!"

For the month of January, please think back over the past year and share with us how your health and habits have changed ... What have you let go of?  What have you lost?  How many dress sizes have you gone down? How many new belt notches you've had to add?  How many medications you've been able to stop using?

Beyond what we've lost, consider what we've found.  A few of the comments I've heard recently: "I am laughing so much more - I just feel freer than I have in years ..."  "I found Hope ..."  "I've found a life I never thought I'd have!"

We are sewing seeds of Hope.  You are sewing seeds of Hope!  We've heard it said that "You are what you eat."  But there's another truth, "We are what we believe."  I believe that we can each successfully pursue and improve our health.  And, I believe we are better when we do it together!
