Hey Dean, There is Cualiflower in my Browies ...

Recently we have been using raw, riced cauliflower in all kinds of dishes.  This includes salads, pizza crust and brownies.  We have previously posted regarding the salad and pizza crust.  We took on the challenge of brownies just to see what we could do and we ended up with very delicious moist brownies.  We shared some of these brownies with our friend Dean and he asked us to publish the recipe.  This is for Dean and Ellen.

In our version of brownies we blend 4 packages of Medifast Brownie meals, 1 package Medifast vanilla pudding and 1/2 to 1 cup riced, raw cauliflower.  After these dry ingredients are blended, add 1/2 cup Eggbeaters and 1 cup water or unsweetened almond milk mixed together.  Stir until batter is mixed.  Do not over mix.  Spray non stick, medium size muffin tins lightly with non stick oil.  Place approximately 1 rounded Tablespoon mix in each cup. Bake in preheated 325 degree oven for 20 minutes. Cool and remove from pan.  We freeze these muffins and use them for breakfast or a midday meal.  Because these brownies are made with Medifast ingredients, two of them will make a meal.
