Polly's Simple Azuki Bean Soup


Polly’s Easy Azuki Bean Soup
·         1 lb  of Azuki or small red beans
·         2  TBS olive or Canolla oil
·         bunch of parsley – chopped
·         1 stalk celery - chopped
·         sweet onion
·         medium carrots - chopped
·         TBS minced garlic
·         1/3 cup  Braggs
·         12 cups of water
·         Salt and Pepper to taste

Soak the beans over night and rinse well
Heat up the oil in a large cooking pot and saute the parsley, celery, onions, carrots, and garlic.
Add the beans, water, and Braggs.
Simmer until beans are tender, salt and pepper to taste.

There are so many variations to this basic soup recipe – have fun with it and go on line for more ideas.
By the way, it tastes even better heated up on the second day!!
