Another LEEN Certified Tofu Recipe


Here is a recipe that was sent to us from the "Forks Over Knives" folks.  This is a great high protein, low fat and carbohydrate alternative to dairy sour cream.  Just another example of  a food that is good for you and good for the planet because it takes less calories for you to use and less energy to produce.  We call this LEEN certified, (Leader in Energy Efficient Nutrition.)

Spiked Sour Cream
1 package extra firm silken tofu 
1 tablespoon lemon juice
1 tablespoon red wine vinegar
1/2 teaspoon chili powder
Pinch cayenne pepper


Combine all ingredients in a blender and puree until smooth and creamy. Chill until ready to serve.  
"Forks Over Knives"Makes 1 1/2 cups
