The Skinny on Tofu

Unless you grew up in a family that used tofu in their meals, you might wonder what you are going to do with this block of white bean curd on the cutting board in front of you.  Tofu comes in different textures from soft to firm.  We use the "Silken Firm" to blend into creamy dips and the "Extra Firm" for cubing into stir fries  Tofu has a remarkable ability to take on just about any flavor you add.  It also comes in a variety of noodle shapes.  Tofu is low in cards, high in protein and a great food if you are on a weight loss program.

For lunch today, Polly and I had the Tofu Shirataki macaroni style noodles with a marinara sauce.  We added a little extra protein and vegetables to the sauce and had a great lunch.  You can get these noodles other types of tofu at many retailers, usually in the specialty food section.  If you have a Japanese or oriental store nearby they should have a good selection of tofu products. 

A great source of information about tofu products can be found at House Foods.  Their website features everything from the making of tofu to a great recipe catalog.  Their products are made with non GMO soy.  They also offer a line of organic products.  Eating plant based foods is good for your health and the health of the planet.
