Going to the Wedding?

Whether you're the bride, groom, parent or friend - we all like looking and feeling our best for weddings and family gatherings ... start where you are, focus on what you want, make a plan, get help, take action, then repeat!!! Yep, repeat over and over again!!! We aren't going in circles, we are spiraling towards goals and dreams of what's most important to us. I'm delighted to be on this journey to health with you. It's been six and a half years since I shed my unwanted pounds ... I still struggle but I get better everyday at deciphering the clues to my own needs and health. I get better at recognizing the differences between hunger and fatigue, requirements and desire.

I admire your determination and recognize the demanding environments we all live in. Food, good and bad, is everywhere. Billboards, fast food joints, candy stands, and soda coolers are in abundance. Friends and families are opinionated, pushy, and generous with their offerings and ideas. It's hard to find the target and stay the course ... this is why we do this together!!!

Grilled Balsamic Marinated Chicken

Balsamic Chicken
Ingredients:
* 18 oz raw boneless, skinless chicken breasts - should yield 12 oz cooked (2 Lean)
Marinade:
* 1 teaspoon dried basil (1 Condiment)
* 1/4 tsp garlic powder (1 Condiment)
* 1/4 teaspoon black pepper (0.5 Condiment)
* 1/4 teaspoon salt (1 Condiment)
* 1/4 cup Newman's Own Lighten Up Balsamic Vinaigrette (2 Healthy Fats)
Directions:
Rinse and dry chicken. Mix all ingredients in small bowl. Pour marinade over chicken in large bowl and toss to combine. Cover and refrigerate for a few hours or overnight. Discard marinade. Grill chicken until cooked.
2 servings with 1 Lean, 1.75 Condiments and 1 Healthy Fat per serving

Salina's Story

It can be overwhelming to feel like you've tried everything and not been able to accomplish your goals. Salina shares how her life was transformed when she found the right path.

Southwest Chicken Soup Recipe




Ingredients:
* 45 oz Chicken, breast, boneless, skinless (raw)
* 6 cup Cooked Tomatoes, canned, stewed
* 12 oz Shirataki Noodles
* 2 1/2 tsp Oil, olive
* 1 tsp Chili Powder
* 4 tsp Garlic
* 2 tsp Bay Leaf
* 1/2 tsp Cayenne Pepper
* 1 cup Cilantro
* 1 tsp Cumin, ground
* 2 tsp Lemon or Lime Juice
* 4 cup Chicken Broth

Preparation:
1. Cut shirataki noodles into 1 1/2 inch sections.
2. Chop garlic if using cloves (1 clove = 1 tsp) and cilantro separately.
3. Rinse the chicken under cold water and pat dry.
4. Heat oil in a large sauce pan over medium heat. Add garlic and saute for one minute.
5. Add the cilantro, stir, and cook for one minute more.
6. Add canned tomatoes with juice, chicken stock, cumin, chili powder, and bay leaves. Bring to a boil.
7. Reduce heat to a simmer and add the chicken breasts and cayenne pepper.
8. Simmer for 15-20 minutes until cooked throughout. Remove and set aside.
9. When chicken has cooled, shred the chicken breasts.
10. Add lime juice and shirataki noodles to the broth. Bring to a simmer and add the chicken.
11. Once chicken is reheated, serve.

One serving provides 1 Lean, 3 Green, 3 Condiments, and 1/2 Healthy Fat.

A bit of Levity!

This is one of my favorite photos of Greg and I - it reminds me to have fun and encourage others to be playful and audacious!!

This attitude helped us face our weight and health issues with a bit of levity. Send me a favorite "Let's not take ourselves so seriously" photo of you. What are you doing for fun? How can a playful attitude help you towards your goals?

Getting serious for a moment, here's a comment I've heard often, "I've been trying to do it on my own and it's just not working! I lose a couple of pounds and then regain them the next week. It's soooo frustrating!"

I know! Been there, Done that!

For me and many others, the best way to lose the pounds is to Get into "Fat-Burning" as quickly as possible. The pounds melt off as soon as I recommit to following the Program, doing the 5&1 with focus, gratitude, and honesty. Then, I transition by the book and commit to eating "clean" (healthy protein, lots of veggies, fresh fruit, and no junk) for a lifetime! When I slip back into old habits and pack on 5-10 pounds, I do it again! I learn more about myself and what it takes to stay slim and healthy constantly. Thank you for being on this journey with me!

Don't ever give up! No matter how many obstacles you're facing, keep your eye on the prize, make a new plan, connect with others who have been successful and keep going!

Cauliflower Pizza Recipe ... Oh Yummmmm!

This is an all-time favorite!

Let's face it ... Pizza is important ... It's been mentioned in three of our blogs so far but always in a derogatory way ... my apologies!

Recently, I found a recipe for a pizza crust made with cauliflower that is compliant on Program.  In addition, it's gluten free and delicious. (Greg simplified it by using only one kind of cheese and suggests you use 1 cup of cauliflower and 1/2 cup either mozzerella or white soy cheese) This has blown my preconceived notions about pizza out of the ball park.

This is a particularly important "score" because it's generally Greg who comes up with the really yummy treats at our house.

When Greg and I set up household as newlyweds 39+ years ago, we didn't know each other very well.  The courtship had been a long-distance one with lots of letters and phone calls of the mushy variety. So, while moving our meager belongings from distant apartments into our new home, I assumed, because of my gender, that I'd be in charge of the kitchen and began to put things away accordingly.  To my surprise, as I was about to organize the silverware into a particularly convenient drawer, Greg announced, "You can't put those there, I need that drawer for my utensils!"  This was my first clue that I had become, not only a very happy Mrs Malby, but also, an ever willing taster, tester, and thrilled recipient of his culinary experiments!  Thus, to score one of the greatest recipes of all times is really a feat worth noting!!

You can eat the whole pizza yourself or share ... if you do, you'll need to add an additional 1/2 serving of protein and 1 1/2 servings of greens to get the calorie and protein amounts right .. oh darn!  Artichoke hearts and basal are my favorites.

For more wonderful variations and tutorials, google "cauliflower crust pizza" ... Enjoy!  PS, most recipes suggest cooking the cauliflower before making the "dough" but it's not necessary - it bakes up just fine without that extra step.
